Makes 14 portions
300 g soy yoghurt
12 TBsp plant milk (I use almond)
12 TBsp neutral tasting oil (sunflower or vegetable oil)
150 Gr sugar
2 packs of vanilla sugar (2 x 8 Gr of vanilla sugar or 4 tsp)
1 Tsp of vanilla essence
1 pinch of salt
600 Gr flour
1 Kg plums
(confection sugar for final dusting when the pastry is ready)
Preheat the oven to 200 - 220 C.
Butter a baking tray. I have used one 30 x 50 cmd
Mix all ingredients and spread onto the tray.
Wash the plums, cut in half and remove the stones.
Arrange the plums cut side up on the dough and transfer the tray to the oven.
Bake for 20 - 25 minutes, dip a wooden skewer in the pastry and if it comes out clear take the pastry out of the oven and let it cool. If there is still some dough on the skewer bake the pastry for another 5 minutes and check again.
Once cool dust pastry with a bit of confectionary sugar.
