Serves 2

Banana and apple topping:
2 Apples, peeled, cored and thinly sliced
2 bananas, split lengthwise and cut in half
1/2 lemon, juice of
1/2 cup of dark brown sugar
1 cup of apple juice
1/2 Tsp ground cinnamon
1 Tsp vanilla

120 grams (1 cup) of old fashioned rolled oats (GF if intolerant)
a pinch of ground sweet spice (vanilla, cinnamon, cardamon or mixed spice)
2 TBsp seeds (chia, flax, sesame, psyllium, etc..)
350 mls plant milk (almond-, soy- or rice- milk)

You could also add chia seeds, goji berries, pumpkin seeds, raisins anything you like..

Preheat the oven to 210 C.
Combine apples and bananas and put into a shallow baking dish.
Combine remaining ingredients except vanilla in a a saucepan and boil until sugar is dissolved.
Remove from heat, add vanilla and pour over bananas and apples.
Bake in 210 C oven for 20 minutes or until juices are bubbling.

​Combine all the dry ingredients in a bowl and mix and add your chosen liquid. Transfer to small glass jars, cover with the chose liquid, stir to mix (check if it is sweet enough to your taste - i tend to sweeten a lot of things with applesauce- recipe following in the pantry section), top with the roasted bananas and apples and close with a lid. Place in the fridge for a few hours or overnight. It will keep there for 5 days. Et Voila:
